Scalloped Cauliflower

  • 1 Head of Cauliflower, Chopped into Bite Size Pieces
  • 3 Tbsp Butter, Melted
  • ⅔ Cup Sour Cream
  • ⅓ Cup Cream (High Fat Preferably)
  • 4 Strips of Bacon, Cooked and Chopped into Bits
  • 1 Tbsp Chives
  • 1 tsp Salt
  • ½ tsp Garlic, Diced
  • ½ tsp Cayenne Pepper
  • 1 ½ Cup Shredded Cheddar
  • ½ Paprika


In a large bowl mix the melted butter with the salt, cayenne, paprika, and cauliflower pieces then toss till coated. Place cauliflower pieces on a parchment lined baking tray and bake for 15-20 min at 450°. In the same bowl add the sour cream, cream, garlic, and one cup of shredded cheddar then whisk together.

Add the crisp cauliflower to the cheese mixture to coat, then pour into a casserole dish, top with bacon bits, remaining cheddar and chives. Return to oven at 450° for 5-10 minutes till cheddar is melted. Serve hot.
