Calling all Peanut Butter Lover's! This is Mama's go to recipie for Keto PB cookies, with a slightly crunchy exterior texture and delicious peanut buttery flavour its hard to eat just one. But hey, they are Low Carb so indulge and have a few. Like Mama's double chocolate cookies, try these as the cookie on an ice cream sandwich, 2 full size cookies at just 6 net carbs with a 1/4 sccop of keto ice cream and you have yourself a treat that will astonish your family and friends.
1 Cup Peanut Butter (All Natural, kraft or 365 brand)
1/2 Cup room temperature butter
1 Beaten egg
Directions
Heat oven to 350° and line a baking tray with parchment.
In a large bowl add peanut butter, butter and egg and mix with a wooden spoon till creamy and smooth.
Add Vanilla baking mix 1/2 cup at a time, mixing well.
Scoop by tbsp onto parchment lined baking pan. about 12 cookies per sheet.
Dip a fork in water and flatten cookie with a checker pattern.
Bake at 350° for 10 - 12 min. Cool and then set for 1 hour in the fridge. Store in an airtight container in the fridge.
Recipe Note
Use crunchy natural Peanut butter for a crunchy cookie, or Mama's favorite additions are 1/4 cup each of salted peanuts and low carb chocolate chips.
