Mama's Focaccia

Breaking bread is a custom for most italian families at meal time. This Foccocia will fill your kitchen with a wonderful aroma of baking fread and spices. Enjoy warm as is or with butter as a side for any meal, or serve as an appetizer with balsalmic and olive oil as a dip.

Ingredients

1 Cup Bugaboo Flour Mix (120g)

3/4 Cup Sunshine Biscuit Mix (90g)
2 Tsp Active dry yeast
1/3 cup warm water (110°F)
1 Beaten egg
2 Beaten egg whites
2 Tbsp olive oil (reserve 1 tbsp for drizzling on top prior to baking)
1/2 Tsp each dried thyme, oregano, basil and garlic salt (mis together and reserve 1/2 of spice mixture to sprinkling on top prior to baking)
Olives, thinly slices onion, chopped garlice pieces or any other garnish you like.
Directions
Heat oven to 350°F. Line a square 8 or 9 inch baking pan with parchment or grease well with olive oil.
Add 1/3 cup of warm (110°F), 2 tsp of honey and 2 tsp of active dry yeast to a bowl and allow to sit for 7 min to bloom. It should look foamy)
Beat the egg and egg whites till frothy, add in the bloomed yeast mixture and 1 tbsp olive oil and mix for 10 sec.
In another bowl blend together the Bugaboo and Sunshine flours along with 1/2 of the spice mixture, then add to the beaten egg mixture and combine, all flour should be wet and the dough shouls be sticky.
Pour sticky mixture into the parchment lined pan and spread with a wet spatula.
Drizzle lightly with about 1 tbl of reserved olive oil, and lightly sprinkle with reserved spices. Garnish as you like. (Mama uses black olives and sweet onion.)
Set aside and cover for about 1 hour with parchment and a clean tea towel to rise a bit.
Bake in oven the for 16 to 24 minutes, check with toothpick to see if dry at 16 minutes, if not continue to bake checking at 2 minute intervals.
Allow to sit for about 20 minutes prior to serving.
