Mama's Double Chocolate Cookies

You will love Mama's Double Chocolate Cookies. They are so decadent, they'll be sure to satisfy even the strongest chocolate craving! These are like a brownie cookie, eat alone, dunk in your favorite milk (milk alternative) beverage, sandwich icecream between two cookies or just serve with a scoop of low carb ice cream. So many options and so easy to make.
Low Carb Mama's Double Chocolate Cookies

3/4 Cup Chocolate Baking Mix (100-g)
1/2 Cup stevia sweetened chocolate chips (Krisda or Lily's)
2 Tbsp Coconut oil
1 Beaten egg
1/4 cup Chopped walnuts (or nut of choice)
1 Tsp Vanilla
Heat the oven to 350° and line a baking sheet with parchment paper.
Add the Chocolate chips to the coconut oil in a microwave safe bowl. Heat on high for 30 seconds and stir well to melt. ( if not melting well heat another 10-15 seconds)
Add vanilla to the chocolate and stir.
Add the beaten egg to the chocolate and vanilla mixture and stir well. Should be glossy.
Chocolate baking mixAdd Mama's Chocolate baking mix and the walnuts to the chocolate mixture and stir till batter resembles cookie dough.
Scoop by tbsp onto parchment lined cookie sheet ( should make 16 mediam size cookies). Flatten just slightly and sprinkle lightly with finishing salt (or Redmond's Real Rock Salt).
Bake for 10 minutes and remove from oven to cool. Store in an airtight container in the fridge (can be warmed for 8 - 10sec in the microwave to get the fresh baked texture after refrigeration).
Enjoy as they are or with dunk in your favorite milk or dairy free milk beverage.
To make ice cream bars, flatten cookies so they are thin and reduce baking time to 8-9 min. When cool turn 1/2 of the cookies upside down and add a scoop of keto or low carb ice cream (Chapman's lactose free and no added sugar or Keto Scream) to each cookie then top with another cookie that was still right side up. Wrap individually with plastic wrap and place in the freezer till ready to enjoy.
