Mama's Cinnamon Bread

The smell of cinnamon toast brings you back to childhood, when mom used to make you breakfast before school, toast lathered in butter and that sugary cinnamon mixture! It was like a little piece of heaven, almost like dessert for breakfast! Well we all know that that sugar is not good for you, so Mama has created a keto version that will bring back those memories but not the empty calories, warm your taste buds and get your day off to the perfect start!

Made with Low Carb Mama's Bread Mix.

Ingredients

1 package of Low Carb Mama's Bugaboo Bread Mix
2 eggs
1 cup of warm water
1/3 cup apple cider vinegar
1/3 cup brown swerve (can use regular swerve)
1.5 tbl cinnamon
1.5 tsp cinnamon
Directions
Heat Oven to 350°.
Line a 3 3/4" x 7 3/4" bread loaf pan with parchment.
In a large bowl add the Bugaboo bread mix and 1.5 tsp of cinnamon and whisk together
In a small bowl add the brown swerve and 1.5 tbl cinnamon and mix with a fork, breaking up all sugar chunks and making sure the cinnamon is well distributed.
In another large bowl add the water and apple cider vinegar, then add the bread/cinnamon mixture to the wet ingredients and whisk to there are no lumps.
Add in the cinnamon brown sugar mixture to the bread batter by swirling it through, you want to still see it so do not over mix it, use a spoon or knife.
Tip: You can add half the mix to the loaf pan and swirl in half the cinnamon mixture and then add the remaining batter and swirl in the remaining cinnamon mixture for a more even distribution.
Pour mixture into the loaf pan and bake for 72 min. Or until internal Tempurature reads 210° with a thermometer.
Remove from oven and bread pan and then return the loaf to the oven, turn off the oven and let the bread cool there for about 30 min, then continue to cool on a wire rack on the counter for 4 hours.
Wrap loosely in parchment and store in the fridge, it can be placed in an open baggie, however do not seal. Will last up to 3 weeks in the fridge, sliced as needed. Toasts well.

Slice before freezing. Can be frozen for up to 3 months.
