Cherry Tomato and Bocconcini Salad

  • 40 Cherry Tomatoes
  • 200g Mini Bocconcini
  • 16 Green Olives
  • 1 tsp Crushed Garlic
  • 10 Drops Stevia
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 ½ Tbsp Balsamic Vinegar (Walden's Farms - Sugar Free)
  • ½ Cup Chopped Fresh Basil
  • Ground Pepper & Salt to Taste


Mix the olive oil, balsamic, stevia and spices in large bowl. Drain the bocconcini and add to bowl along with the tomatoes and ½ the basil. Toss till coated, plate on salad plates sprinkle a little fresh basil and a twist of salt and pepper on top.
